Cook Up Collard Greens

In Jamaica we eat a rice dish called “cook up rice” where we utilize whatever is on hand. A lot of different cultures have something similar as far as that dish that just takes whatever is in the pantry and makes it work – so I took a little inspiration from that for this rendition of collard greens in terms of SEASONINGS.

I used seasoning blend from Trader Joe’s called 21 Seasoning Salute which has everything but the spice kitchen sink in it. I bumped up complex but smooth spice combo with a drizzle of honey, crushed red pepper flakes, rice wine vin and Bam – it’s cook up!

 

Cook Up Collard Greens

Ingredients
  1. 1 pound fresh collard greens, cut into strips
  2. 1 large onion, diced
  3. 2 cloves garlic, minced
  4. 1 tsp salt
  5. 1 tsp pepper
  6. 2 Tbsp "21 Seasoning Salute" or no-salt sweet & savor dry spice blend
  7. 1/2 tsp red pepper flakes
  8. 1/4 cup rice wine vinegar
  9. 1/4 cup apple cider vinegar
  10. 2 cups stock (chicken or veggie)
  11. 1 Tbsp honey
Instructions
  1. Heat oil in a large pot over medium-high heat.
  2. Add onion, and cook until tender, about 5 minutes. Add dry spice blend.
  3. Add garlic, and cook until just fragrant.
  4. Add vinegars, all to reduce slightly (less than half).
  5. Add collard greens, and sautee until they start to wilt.
  6. Pour in broth, and season with salt, pepper, and red pepper flakes.
  7. Reduce heat to low, cover, and simmer for 20 minutes, or until greens are tender they way you like it.
