How to Make Falernum

Falernum (pronounced fah-learn-um) is a sweet syrup used in Caribbean and tropical drinks. It contains flavors of almond, ginger and/or cloves, and lime, and sometimes vanilla or allspice. It is used in cocktails in a manner similar to orgeat syrup or drunk on the rocks. The syrup form can be alcoholic or nonalcoholic.

Ingredients
  1. 1 bottle (750ml) White Rum
  2. 1 cup sliced Ginger Root
  3. Zest of 8 to 10 Limes
  4. 12 Cloves, whole
  5. 12 Allspice Berries, whole
  6. 3 sticks Cinnamon
  7. 8 Star Anise, whole
  8. 2 1/2 teaspoons Almond Extract
  9. 1- 2 cups Simple Syrup
  10. 1 - One gallon glass jar with a lid
  11. 1 - Bottle with cap for storage
Instructions
  1. Add the rum and all the other ingredients except the simple syrup and almond extract to the glass jar and seal. Let the mixture sit for 24 to 48 hours.
  2. Strain the mixture through clean cheesecloth or fine strainer, into the bottle or jar you would like to store the falernum in.
  3. Add the simple syrup and the almond extract. Shake well to mix.
Notes
  1. Adjust the simple syrup to taste.
