Ingredients
  1. 1 tbsp Unsalted Butter
  2. 1/2 c Cashew
  3. 1/2 c Ketchup
  4. 1/4 cup Guava Paste
  5. 2 tbsp Honey
  6. 2 tbsp Walkerswood Jerk Seasoning
  7. 1 1/2 tbsp Soy Sauce
  8. 1 tbsp Rice Vinegar
Instructions
  1. Toast cashews in butter, until slightly toasted and fragrant
  2. Add remaining ingredients and stir to combine, allow to simmer so flavors can come together
  3. Taste and adjust as needed
Notes
  1. The cool part apart this sauce is that you can tweak to your taste. If you want it more sweet than spicy - add more honey or guava, more salt - add a little more salt or soy and so one with the spice level - add more jerk. Bonus! It is super versatile; use it on chicken, shrimp, steak or pork. Yum!

Ingredients
  1. 2 Hass Avocados, diced
  2. 1 cup Creme Fraiche
  3. 1 Lime
  4. 1 tsp Ground Cumin
  5. Salt to Taste
Instructions
  1. Combine avocado and creme to a chunky and creamy consistency
  2. Squeeze half lime and cumin into mixture. Stir to incorporate.
  3. Scoop mixture into high power blender and whip til creamy, you may need few drops of water to help blender do its job. Once smooth, scoop in to a bowl and salt and squeeze lime to taste.
  4. Serve in place of regular sour cream on any dish and go crazy
Notes
  1. Plus people will this you're all fancy because you made something called "creme" haha you know it sounds fancy.

1-2-3 Chipotle Mayo

I am so excitedly nervous to share my first ever Youtube recipe (tutorial) with you guys.  It isn’t flawless but I am super happy with it.  I decided to do something simple in order to ease my way in to the “food video” process plus that’s how I cook – SIMPLE but good!  This video and recipe below is one of my absolute favorite condiments – I REALLY love this stuff to no end.  It’s Chipotle Mayo! I have simplified the ratios/amounts of the ingredients in order to make it easy as 1-2-3.  I hope you try it, enjoy it and share it ;o) And take a pic of it and hashtag #iCook #Cooking WithShelly so I can repost.

Ingredients
  1. 1 cup Mayonnaise
  2. 2 tbsp Adobo Sauce (sauce chipotle peppers are packed in )
  3. 2 tbsp plain Greek Yogurt
  4. 3 Chipotle Peppers
  5. 1/2 Lime, juice
  6. Salt to Taste
Instructions
  1. Combine all ingredients in a food processor or blender and blend until smooth.
  2. Taste & Adjust Heat or Salt level as you go.
  3. Serve on ANYTHING haha - yes breakfast, lunch, dinner, brinner, brunch or snack; it works for all!
Notes
  1. More peppers equals More Heat and Less peppers equals Less Heat. That also applies to the adobo sauce.
  2. Variation : For a little Sweet Heat add a few tablespoons of honey ;o) Yummy!
